I’ll admit it. I’m a pushover for apple pie. All that cinnamony, appley, flaky goodness is simply heaven on earth to my tastebuds. There’s just something comforting about apple pie. Then, you serve it up warm with a couple of scoops of ice cream…it’s the best!
I gotta tell you how much I love this dough for the crust. It is so soft and easy to work with. It rolls out easily. Can you see how thin it is? I wanted you to see it rolled out so you have something to compare yours to. A traditional pie crust is thicker. You can also see a bit of my personality in that crust too :). I am typically a perfectionist but not when it comes to rolling out dough. It gives me a great sense of accomplishment to have such an odd-shaped crust that ends up to be such a great dessert.
Wow! Look at those cinnamony, sugary apples! They are so juicy that the sugar mixture was starting to melt on them before I could get the picture taken. Oh yeah, I have to tell you about these apples…
So, we have an orchard behind our house. It is home to a peach tree, cherry tree, mulberry tree, and three apple trees. One of the apple trees is a Red Delicious and the other two we have no idea. We call them snow apples because they are pure white inside and much softer and smaller than a Red Delicious. They are perfect for baking.
Now that you have your apples situated in the pan, it’s time to roll out the other half of the dough for the top of the Apple Pie Bars. The top will be rolled thin as well. Once you place it on top of the apples, you can work around the edge tucking the top dough under the bottom layer and pinching all around. Pop in the oven for approximately 30 minutes, apply glaze when cooled and enjoy!

Apple Pie Bars
These Apple Pie Bars are a great option for a crowd. The taste of apple pie with a bit of powdered sugar glaze. Great served warm with ice cream!
Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup shortening or lard
- 1 Tbsp. sugar
- 1 tsp. salt
- 1 egg
- Milk
- 5-6 apples, peeled, cored, and sliced thin
- 1 cup sugar
- 1 Tbsp. cinnamon
- 1 1/2 Tbsp. all-purpose flour
- 3/4 cup powdered sugar
- 2 Tbsp. melted butter
- 1/2 tsp. vanilla
Instructions
- In a large mixing bowl, combine 2 1/2 cups of flour, shortening or lard, 1 Tbsp. sugar, and salt with a pastry blender.
- Put the egg in a liquid measuring cup and fill with milk until you have 2/3 cup measured.
- Add the egg and milk to the flour mixture and combine well until you have a ball of dough.
- Split the dough in half and roll out one of the halves on a lightly floured surface to fit a 10" x 15" sheet pan. You will want to roll this a bit larger than the pan so you have dough up the sides as well.
- Prepare the apples by coring, peeling, and slicing. Spread the apples on top of the dough in the sheet pan.
- Mix together 1 cup of sugar, cinnamon, and 1 1/2 Tbsp. flour and sprinkle over the apples.
- Roll the remaining half of the dough and place on top of the apples.
- Bake at 350 degrees for 30 minutes or until apples are soft when poked with a knife. Cool before adding the glaze.
- In a small bowl, mix powdered sugar, butter, vanilla, and milk until you have a thin consistency.
- Drizzle the glaze over the bars.
