Have I mentioned my love of anything banana? It’s probably a close second to anything with apples. These Banana Muffins are a spin-off from my Banana Bread recipe. You won’t be disappointed. 🙂

Bananas are so good for you and have a multitude of uses. I put them in bread, ice cream shakes/malts, cakes, pies, pudding desserts, and of course muffins! You can also dehydrate them for banana chips as a healthy alternative to satisfying your sweet tooth.
These Banana Muffins have a subtle streusel topping but they are great without if you don’t care for nuts. Me, I’m a fan of lots of texture. With these Banana Muffins, you have it all. A cake-like muffin with the crunchiness of nuts and sweetness of the brown sugar. I like to add a streusel topping to my banana bread and cakes too. And, let’s not forget about adding butter as a spread. I can’t think of any bread or muffin that isn’t better with butter. LOL
Thinking about bananas…how do you peel yours? I always use to peel my bananas from the stem end. But, did you know you should actually start at the bottom? Supposedly, it will lessen bruising and I even heard that end is sweeter. I guess monkeys always peel their bananas from the bottom. See? I have proof! LOL So, of course, that’s how I peel them now too! 🙂

Banana Muffins
I can't get enough of these Banana Muffins! They are super moist and great with a cup of coffee for breakfast or as a snack. Add some butter and enjoy!
Ingredients
- 3/4 cup brown sugar
- 1/4 cup butter, softened
- 1 egg
- 2 cups all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 bananas, mashed (approximately 3/4 cup)
- 5 Tbsp. sour milk (add 1/2 tsp. of lemon juice to sour the milk)
- 1/4 cup brown sugar
- 1/2 cup finely chopped pecans or walnuts, optional
Instructions
- Preheat oven to 350 degrees. Grease a 12 cup muffin pan or you can use paper liners.
- Cream the butter and 3/4 cup brown sugar in a large mixing bowl.
- Add egg and mashed banana, mixing until smooth.
- Sift dry ingredients together in a small bowl and add alternately with the milk to the creamed mixture.
- Sprinkle 1/4 cup brown sugar and nuts on top of the muffins.
- Bake for 20 minutes or until an inserted toothpick comes out clean.
