I’m sure you’re thinking to yourself, another banana recipe?! Heck ya! This Banana Snack Cake is the “BOMB”, LOL. It’s made with basic pantry staples and is really quite versatile. Great any time of the day but honestly, my favorite is for breakfast with a cup of coffee. 🙂 Just look at that yumminess!
For many years, I have made this banana cake without streusel on top and it is great that way too. However, I was looking for more of a breakfast, coffee cake type of treat so adding streusel seemed like the way to go. And, let me tell you, it is a perfect marriage. LOL. But hey, if you aren’t fond of nuts or a streusel topping in general, simply leave that off. Either way, you are going to love it!
Did I mention yummy and made with pantry staples? 🙂 It doesn’t get any better than that! And, during these crazy times right now, anything we can make with the basics that most of us have, the better.

Banana Snack Cake
Whether you need a snack, a breakfast cake or after-dinner dessert, this is your cake! It's super moist and full of brown sugar flavor.
Ingredients
- Cake:
- 1 1/2 cups brown sugar
- 1 cup butter, softened
- 2 eggs
- 2 cups flour
- 3/4 tsp. baking soda
- 3/4 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup almond or white milk
- 3 ripe bananas, mashed
- 1 tsp. vanilla
- Streusel Topping:
- 1 cup walnuts, finely chopped
- 1/3 cup flour
- 1/4 cup brown sugar
- 4 Tbsp. butter, firm, and cut in small pieces
- 1 tsp. cinnamon
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix brown sugar, butter, and eggs until well combined.
- In a small bowl, combine flour, baking soda, baking powder, and salt.
- Add the flour mixture to the brown sugar mixture, alternately with the milk.
- Add mashed bananas and vanilla, mixing well.
- Pour into an ungreased 9" x 13" baking pan.
- In a small bowl, combine the streusel ingredients.
- Layer the streusel evenly on top of the cake batter.
- Bake at 350 degrees for 30-35 minutes or until an inserted toothpick comes out clean.
Notes
This cake is also great without the streusel topping if you prefer.
