I’m not gonna lie…I love Brussel Sprouts! Now, I realize it isn’t everyone’s “cup of tea” but I encourage you to give this recipe a try. The garlic, rosemary and balsamic vinegar give it that extra punch of flavor. You will also be surprised at the radish in this dish. Cooking them creates a whole different flavor than if they were raw. Did you notice how they become almost transparent?
The charred effect on the brussels is due to using a cast-iron skillet. I like the texture and appearance it gives to the dish. I have a Brandani cast-iron skillet but this one is great too and comes in a set of two different sizes. I’m a sucker for a bargain. LOL.
I could go on and on about brussel sprouts but let’s give some love to the Tilapia as well. Bear with me on this…I have to tell you how convenient and good these fillets are. I get them home delivered from Schwan’s Company and they are individually wrapped. Have you heard of Schwan’s? They are a frozen food company based in Marshall, Minnesota. What’s awesome is they deliver right to my house! I go online, place my order, and it magically appears at my door, LOL. One last thing before I let you get to cooking…the options really are endless with this dish. Feel free to experiment by adding other vegetables, seasonings, meat, and condiments. I made this for lunch yesterday too but put smoked turkey in it rather than fish. Let me know how you “change it up”.

Brussel Sprout Stir-Fry with Tilapia
Ingredients
- 2 cups of brussel sprouts, sliced in half
- 1/2 cup baby carrots, sliced or julienne
- 1/4 cup of radishes, sliced into bite-size pieces
- 1 tsp. rosemary
- 1 clove of garlic, finely diced
- 2 (4 oz) Tilapia fillets
- Splash of balsamic vinegar
- 3 Tbsp. extra virgin olive oil
Instructions
- Preheat oven to 400 degrees.
- Clean the brussel sprouts by removing a layer of the outside leaves, chopping off the stem end and rinse under cool water.
- Chop the brussel sprouts in half or quarters if they are extra-large.
- Cut the carrots either in chunks or julienne.
- Clean and cut the radishes into bite-size pieces.
- Brush the Tilapia fillets with olive oil on both sides and place in a foil-lined baking dish. Bake in a 400-degree oven for 7 minutes, turn over and bake an additional 7 minutes. Let rest for 1 minute.
- While the Tilapia is baking, place the brussel sprouts, carrots, radish, rosemary and garlic into a preheated skillet with 2 Tbsp. of olive oil. Cook until carrots are tender. Splash with balsamic vinegar to your liking and remove from the skillet to your serving dish.
- To serve, place half of the vegetable stir-fry on a dinner plate and top with one Tilapia fillet.
Notes
Feel free to change to the portions of the vegetables per your liking and to season as you wish. Soy sauce would be a great condiment in place of the balsamic vinegar. Note that any changes to the original recipe may affect nutrition values.
