Did somebody say Cheeseburger? Yep, I’m in! This Cheeseburger Casserole is one of those feel-good comfort foods that the whole family will love.

So, let’s talk about this a minute. Cheeseburger, casserole, no bun needed? That sounds like a win to me. 🙂 I mean, isn’t the best part of a cheeseburger the meat and cheese? Oh yeah, the pickles too, LOL.
I must confess. I had a difficult time not wanting to call this Cheeseburger Hot Dish rather than Cheeseburger Casserole. It’s always been a casserole to me but I hear so many people refer to these one-dish phenoms as a hot dish. Did you know the term “hot dish” originated in Minnesota? I don’t want to brag but I should probably tell you that I am the casserole queen in this corner of Iowa. Okay, it’s a self-proclaimed title but I bet my husband would agree. 🙂 To his amazement, I can turn any leftovers, canned goods, and/or produce into a casserole. I must say that I am one lucky girl that he supports my casserole madness.
Helpful tips:
- You can use any style of pasta you have on hand. Rotini, elbow, Penne, shell, etc.
- Feel free to add some of your favorite “cheeseburger” toppings. Onions, tomatoes, lettuce, and everybody’s favorite, bacon!
- You can also get creative with cheese. This recipe calls for cheddar or Colby/Jack but I could see it as being great too with Swiss.

Cheeseburger Casserole
All the yumminess of a cheeseburger served up in a casserole!
Ingredients
- 1 lb ground beef
- 2 cloves garlic, peeled and diced
- 2 Tbsp. tomato paste
- 1 Tbsp. dijon mustard
- 1 (15 oz.) can petite tomatoes
- 1 cup of water
- 2 cups uncooked pasta, ex: Rotini, elbow, or Penne
- 2 cups cheddar or Colby/Jack cheese
- Diced dill pickles (optional)
Instructions
- Preheat oven to 350 degrees.
- Bring 6 cups of water to a boil, add pasta and cook until tender. Drain.
- In a skillet, brown the ground beef with garlic.
- Add tomato paste, dijon mustard, tomatoes, and water to the ground beef and garlic.
- Stir the drained pasta into the ground beef mixture.
- Pour into a 2-quart casserole dish or leave in your skillet if it is oven safe.
- Add cheese to the top of the ground beef mixture.
- Bake at 350 degrees for 20 minutes or until cheese is melted.
- Top with diced dill pickles when serving (optional).
Notes
Any style of pasta will work for this casserole.
