Anyone that knows me well knows my love of casseroles. They are quick, easy, and typically contain lots of cheese! What’s not to love about that? 🙂 And add the fact that you can easily use pantry staples and leftovers to create a casserole (more on that in a future blog post). Well, that’s a huge win in my book!
This Cheesy Hamburger Casserole goes way back to when our kids were little and still living at home. It was and still is a favorite. If you have a picky eater in your house, this casserole is a must-try. Full of cheese, pasta and ground beef or hamburger here in the Midwest, LOL. Basically everything that kids (and adults) love :).
Here’s an interesting tidbit…for some unknown reason, I have to make peas to serve with this casserole. Canned peas. Not frozen. Not fresh. From a can. Strange? I really don’t know how it started but it’s a must for me. I’m curious. Is there something that you make that you just can’t eat without another particular item served with it? Like spaghetti and green beans? (I’ll save that story for another day, LOL)
Cheesy Hamburger Casserole
Like I mentioned above, this is super easy to make. Here are the basics:
- Cook pasta in boiling water until al dente and drain. You can use any pasta, Ex: Rotini, egg noodles, elbow macaroni, Penne, spaghetti, etc.
- Brown ground beef (hamburger) with onion and drain
- Add cream of chicken soup, milk and pasta to the ground beef mixture
- Add Velveeta cheese. You can use any cheese of your liking but I love the way Velveeta melts and gets all gooey 🙂
- Bake at 350 degrees for 25 minutes then top with potato chips and return to the oven for an additional 5 minutes. You can use a variety of chips, Ex: plain, any flavor of Doritos, sour cream & onion or ranch flavor
That’s it! Simple, quick, and a meal that everyone will love. Add a side of vegetables if you like, maybe peas, 🙂 and bread/dinner rolls. Let me know how you enjoy the casserole. Here’s another casserole option too that’s full of cheesy goodness.

Cheesy Hamburger Casserole
Cheesy, crunchy, creamy is exactly the definition of this casserole! Comfort food the entire family will love.
Ingredients
- 3 cups uncooked pasta (egg noodles, Rotini, Elbow macaroni, etc.)
- 1 lb. ground beef
- 1 small onion, diced
- 1 can Cream of Chicken soup
- 1 soup can milk
- 1 cup Velveeta cheese, cubed
- Potato Chips, plain
Instructions
- Preheat oven to 350 degrees and grease a 9" x 13" baking pan or 3-quart casserole dish.
- Bring 6 cups of water to boil in a large saucepan and add the pasta, cooking until al dente.
- While the pasta is cooking, brown ground beef, and onion. Drain and remove from the stove.
- To the ground beef, add soup, milk and cooked drained pasta.
- Add Velveeta to the ground beef mixture.
- Place in a covered baking dish and cook at 350 degrees for 25 minutes.
- Add crushed potato chips on top and cook an additional 5 minutes, uncovered.
Notes
Feel free to experiment with various types of chips. This casserole is great with plain chips, Doritos (any flavor), sour cream & onion or ranch-flavored chips.
