Have you been desperately looking for that perfect cookie that’s chewy, crunchy, and dare I say, “great for dunking”? Well, gang, this is it! I present to you Chewy Granola Raisin Cookies 🙂
So, let’s get this out in the open…I’m a cookie/bar lover! There, I said it. Cookies or bars are my “go-to” snack of choice. I like them chewy with a bit of crunch so they hold their shape when I decide to dunk them. 🙂 Don’t believe me? Check out my Loaded Chip Oat Bars.
As I have gotten older, I lean towards simplicity and minimalism. What does that have to do with cooking/baking? Everything! Don’t get me wrong; I like all kinds of sweet treats but I definitely gravitate toward the ones that are quick to “whip up” and give me the sugar satisfaction that I am craving. So, let’s dive into these beauties!
Basic Ingredients:
- Butter – I typically use salted but unsalted is fine too. You can also substitute with margarine
- Sugar
- Brown Sugar
- Egg
- Vanilla
- Coconut – don’t like it? Leave it out or replace with nuts, seeds, or chocolate chips
- Raisins – dried cranberries are a great substitution
- Granola – pretty general, I know, but it’s really your choice. I use a basic oat, cinnamon-flavored granola. Granola with nuts is also a great option.
- All-purpose flour
- Baking Soda
- Baking powder
- Salt
Don’t let this list overwhelm you. It seems daunting but is comprised of basic pantry ingredients. And, the great part about these Chewy Granola Raisin Cookies is that you can make substitutions for many of the ingredients. I’m a huge proponent of adding your own special touch to a recipe. I give you the basics. The rest is your creation. 🙂

Chewy Granola Raisin Cookies
Chewy and crunchy in one delicious cookie!
Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 tsp. vanilla
- 1/4 cup coconut
- 1/2 cup raisins
- 1 1/2 cup granola
- 1 cup flour
- 1/2 tsp. baking soda
- 1/4 tsp. baking powder
- 1/4 tsp. salt
Instructions
- Preheat oven to 350 degrees.
- Cream butter, sugars, egg, and vanilla.
- Mix in remaining ingredients until well combined.
- Drop by rounded 1 1/2 Tbsp. scoop on ungreased baking sheet.
- Bake 12 minutes at 350 degrees. Remove from the oven and let rest for a couple of minutes before removing to a cooling rack.
Notes
If raisins aren't your thing, feel free to swap for dried cranberries, chocolate chips, m&m's, white chocolate chips, peanut butter chips, or other chips of your choosing.

We were lamenting that we didn’t have anything sweet in the house and recently, for no good reason had started stockpiling granola so my wife suggested I make some.granola raisin cookies. I found this recipe. We were out of eggs but I substituted a mashed banana and it came.out very nice: light, crispy and chewy all at the same time. Easy to make and easy to clean up after. 5 stars.
