It’s apple season here in Southwest Iowa and I couldn’t be happier! One of my favorite apple treats is this Fresh Apple Cake. This is the ultimate apple dessert. It’s super moist with tiny bits of apples throughout. It can be mixed up quickly and enjoyed with your favorite beverage. My choice would be a steamy cup of coffee or hot chocolate. Yum!
I think apples are just one of the best fruits. Mainly because they are so versatile. Think of all the great things you can make with apples…muffins, bread, vinegar, juice, cider, a multitude of desserts and, of course, Fresh Apple Cake. The downfall of this cake is having to eat it all myself since my husband, Jack, doesn’t like cake. Wait, what….? He doesn’t like cake? I have no words. 🙂
I am blessed to have an orchard on The Farm right behind our house. It is home to three apple trees, a peach tree, a cherry tree, and a mulberry tree. There is also a strawberry patch that keeps us busy most of June each year. The orchard holds a special place in my heart. It was started years ago by Jack’s parents and is where Jack and I were married. You will also find numerous flower gardens that were planted by Jack’s mother. It is definitely a magical place in the spring. LOVE 🙂
Getting back to the apple cake…if you want to save some of this cake for another time or for those surprise guests, it can be frozen. I suggest freezing without the powdered sugar glaze. You can add that after you thaw. I hope you enjoy this cake as much as I do. Happy eating!
Fresh Apple Cake
This Apple Cake is super simple to make. It's a great after-dinner dessert or as a start to your day with a steamy cup of coffee.
Ingredients
- For Cake:
- 1 cup margarine or butter
- 2 cups sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 4 cups finely diced fresh apples (peeled and cored)
- For Glaze:
- 2 cups powdered sugar
- 1 tsp. vanilla
- 1 Tbsp. margarine or butter
- 3-5 Tbsp. milk
Instructions
- Preheat oven to 350 degrees. Grease a 9" x 13" pan (you can use either shortening or cooking spray.
- In a large mixing bowl, cream together the margarine or butter, sugar, and eggs.
- In a separate bowl, sift together the flour, baking soda, and cinnamon.
- Add the flour mixture to the creamed mixture and, with a mixer on medium speed, combine for approximately 2 minutes.
- Add the chopped apples and gently mix with a spoon.
- Pour into a 9" x 13" baking pan and bake for 1 hour. Cool before adding the glaze.
- While the cake is cooling, mix 2 cups of powdered sugar, 1 tsp. of vanilla, and 1 Tbsp. of margarine or butter.
- Add 3-5 Tbsp of milk until you get a drizzle consistency.
- Drizzle over the cake with a spoon.
