Needing a buttery, crunchy treat? These Loaded Chip Oat Bars will not disappoint! They are packed with chocolate, peanut butter, and oats. That’s a win in my book 🙂
It’s been forever since I made these bars. I completely forgot how buttery, chocolaty, and peanut buttery (is that even a thing?) they are. Add the fact that they are super easy to make, I’m in. 🙂 Just mix all the ingredients together, spread in a pan, and bake. Start to finish in 35 minutes!
I’m a sucker for a cookie/bar that’s crunchy on the outside but soft and gooey on the inside. So, you can about guess that I’m an “edge” gal. And, the corner pieces…I’m in heaven! Have you seen the brownie pans that are all edge pieces? Genius!
This makes a large pan of bars so what better snack to take to a family gathering or potluck. Now I know it seems like we will never be sharing good times with friends and family anytime soon but I’m optimistic that there will be some form of gathering this summer. It may not be in the traditional sense with a huge amount of people but that doesn’t mean potluck food is banned. Bring it on!
Here’s the scoop
There are a lot of ingredients in these Loaded Chip Oat Bars. Hence, the name. 🙂 The beauty is they are basic pantry items and you put all the ingredients into one bowl and mix. Easy Peasy! If you are running low on supplies or need to substitute, here are some options:
- Butter – you can replace with 1 cup of oil. I suggest canola or sunflower oil.
- Chocolate chips – you can replace with chopped candy bars or another flavor of chips.
- Peanut butter chips – 1 cup of peanut butter from a jar is a great replacement or butterscotch chips.
- Some add-ins if you like even more texture: raisins, dates, dried cranberries, nuts, coconut, and seeds. I’m a big fan of sunflower and chia seeds.
One more thing…these are very kid-friendly and a great grab and go snack (no fork needed). If you are dealing with a handful of kids during this quarantine time, you should also try this Banana Snack Cake for them and maybe this Brandy Slush Cooler for you, LOL!

Loaded Chip Oat Bars
Chocolate, peanut butter, and oats all packed into a super easy cookie/bar.
Ingredients
- 2 cups flour
- 1 cup sugar
- 1 cup brown sugar
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. vanilla
- 1 cup unsalted butter, melted
- 2 eggs, beaten
- 2 cups oats
- 1 cup semi-sweet chocolate chips
- 1 cup peanut butter chips
Instructions
- Preheat oven to 350 degrees.
- Mix all ingredients together until well combined.
- Pat into an ungreased 10" x 15" jelly roll pan.
- Bake at 350 degrees for 20 minutes.
