Our celebrations have been looking a bit (no, a lot!) different since the progression of the Coronavirus throughout the world. I know for many of you (me included), it’s been difficult to grab hold of any sense of normalcy. Celebrations have been awkward or completely non-existent. That all ends now! Let’s get ready for Cinco De Mayo!
Just a random thought here…why do we celebrate Cinco De Mayo here in the United States? I guess I thought it was just an excuse to have a party, LOL! However, after a bit of research, it was actually started in 1863 in Southern California in support of solidarity with Mexico against French rule. Don’t believe me? Check it out here. I found this on the internet so it must be true!? 🙂
Back to this awesome Mexican Layered Party Dip: Honestly, this dip isn’t just for parties. Jack and I devour a batch of this all by ourselves! (LOL) But, hey, it is called a party dip so let’s dive in.
Tips and tricks
Here are a few notes that will be helpful:
First, my heart goes out to you if you do not have Anderson Erickson (AE) Dairy products available in your area. Ask any Midwesterner how good their products are. Hands down, no comparison to any other.
Second, this dip is very customizable so, if you do not have access to AE Mexican Dip, you can substitute with other items such as another brand’s Mexican style dip (Ex: Hiland Southwest Ranch Dip), guacamole, or even another layer of the mayo, sour cream, taco seasoning layer. My motto is “the creamier, the better”!
Third, do you have picky eaters in your house? If so, listen to this…my dad is a meat and potatoes kind of guy. And, he is not open to trying anything that he thinks he won’t like (cue the refried beans) :). I have learned that, if you want him to try something, you just don’t tell him what’s in it. He loves this Mexican Layered Party Dip! He’ll never know it has refried beans as a layer, LOL. The moral of this story is…if dad likes it, your kids will too!
I think I mentioned margaritas at the beginning of this post :). That would be my first choice of beverage. However, the Brandy Slush Cooler is right behind it. Anything cold and refreshing is the best companion to this dip.
No matter how you decide to celebrate this year, I hope it is fun, relaxing, and a time to connect with friends and/or family. Even if it has to be virtual.

Mexican Layered Party Dip
Creamy and packed full of flavor, this Mexican Layered Party Dip will not disappoint. Grab tortilla chips, your favorite beverage and enjoy!
Ingredients
- 1 (16 oz) can refried beans
- 1 (8 oz) container Anderson Erickson (AE) Mexican Dip **see notes for substitutions**
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 pkg taco seasoning mix
- 1 large bunch green onions/scallions, diced
- 2 medium-size Roma tomatoes, seeded and diced
- 1 (8 oz) can black olives, sliced
- 2 cups cheddar cheese, grated
- Tortilla chips
Instructions
- Spread refried beans in a 9" x 13" pan or a large platter.
- Spread the AE Mexican Dip on top of the refried beans.
- In a small bowl, combine sour cream, mayonnaise, and taco seasoning.
- Spread this mixture on top of the Mexican dip.
- Sprinkle green onions/scallions, tomatoes, and black olives over the top.
- Top with cheese.
- Chill for a minimum of 8 hours to infuse the flavors.
- Serve with tortilla chips.
Notes
If AE (Anderson Erickson) products are not available in your area, you can use Hiland Southwest Ranch dip or any brand that carries a Mexican style sour cream dip.
Another alternative is to substitute the AE Mexican Dip with another layer of the sour cream, mayo & taco seasoning. A layer of guacamole would be great too.
