I have been making these yummy chocolate quick brownies since I was a young aspiring cook, LOL. Seriously though, this is my go-to brownie recipe. It’s the perfect mix between a cake and a fudge brownie texture.
Did I ever tell you about the time my mom and I ate an entire pan of these brownies right before dinner? OMG, I was in high school and I can’t tell you how much fun that was! We intended for them to be a dessert for after dinner. I’m sure my dad and siblings were not amused. 🙂
I was raised in a sweets lovin’ family. You know how most Midwest families have a well-rounded meal of meat, potatoes, a side dish of vegetables and dinner rolls? My family took things a bit further and it was a must to have a dessert after every meal.
So, let’s get on with making these…
The first key to making the brownies is to use a pastry blender to incorporate the sugar, flour, baking powder, salt, baking cocoa, and shortening. Make sure you have worked it enough to see little chunks of the shortening throughout. This will result in the cake/fudge texture of the baked brownies.
Key number 2…well-beaten eggs. I mean very well-beaten. This will make the final mixing much simpler. With the addition of eggs, vanilla, and walnuts (if desired), you will have a very thick batter. Therefore, I mix it with a wooden spoon rather than an electric mixer.
Bake time is approximately 20 minutes for a 2-quart baking pan. If you use an 8″ x 8″ baking dish for thicker brownies, the baking time may be a bit longer. My tried and true method for doneness is a toothpick inserted that comes out clean.
Ideally, they should be cooled before adding a dusting of powdered sugar. However, if you can’t wait to dig in once they are done baking, you can dish them up and dust at that time or even add a scoop of your favorite ice cream.

Quick Brownies
Quick Brownies ready to eat in 35 minutes! A great combination of a cake/fudgy texture. Dust with powder sugar or top with your favorite frosting.
Ingredients
- 1 cup sugar
- 1 cup all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 4 Tbsp. baking cocoa
- 1/2 cup shortening
- 2 eggs
- 1 tsp. vanilla
- 1/2 cup walnuts (optional)
- Powdered Sugar for dusting
Instructions
- Preheat oven to 325 degrees and grease an 8" x 8" baking pan.
- In a large bowl, blend sugar, flour, baking powder, salt, cocoa, and shortening with a pastry blender.
- Beat the eggs in a small bowl.
- Add well-beaten eggs, vanilla, and walnuts to the flour mixture and combine well. The batter will be very thick.
- Spread the batter in a prepared baking pan.
- Bake at 325 degrees for 25 minutes or until an inserted toothpick comes out clean.
- Dust with powdered sugar when cooled.
