Do you love a sloppy sandwich as much as I do? Well then, look no further. These Saucy Chicken Bacon Sandwiches are perfect!
Let’s give a shout-out to all the sloppy, saucy, messy sandwiches! I’ve always said, the messier they are, the better they are. 🙂 Bonus is when they are quick and easy to assemble on those busy weeknights. Simply add some fries or a salad and your meal is complete.
So, let’s talk about these Saucy Chicken Bacon Sandwiches! My mother-in-law used to make a similar sandwich with leftover cooked chicken. A simple sandwich but they were so yummy! After she passed away, I looked everywhere for the recipe but no luck. Even family members were quizzed as to how she made them. My guess is there was no recipe which is very typical of the times she grew up in. Hence, I was left to create my own version. I added bacon and top them with ranch dressing. You’re welcome, LOL.
Can we take a minute to talk about bacon? Only recently, I started cooking bacon in the oven. I’ve seen the process all over social media but was skeptical. Yes, I’m “old school”. Bacon was always cooked in a skillet on the stovetop. But, I can honestly say that my mind has been changed. I don’t cook it any other way now! If you haven’t tried it yet, here’s the skinny…layer the bacon on a parchment-lined baking sheet, bake at 400 degrees until done to your liking. I let them bake for about 10-15 minutes, turning the pieces over halfway through baking. Then drain by placing them on a plate lined with paper towels. That’s it!
Here’s what you need to make Saucy Chicken Bacon Sandwiches:
- Butter
- All-purpose flour
- Chicken Broth
- Milk
- Chicken breast
- Bacon
- Hamburger buns
Instructions:
- Melt butter in a skillet on medium heat.
- Add flour to the butter and cook for 1 minute to create a roux.
- Create your sauce by whisking the chicken broth and milk into the roux. Cook until it starts to thicken.
- Add chicken and bacon to the sauce and cook for 3-4 minutes.
- Serve on hamburger buns with your favorite toppings.
Notes:
- I like to let the chicken cook all day in a slow cooker. After about 6 hours, it’s ready to shred. Another option is to use leftover chicken from a previous meal.
- Cook extra bacon to use for salads or other entrees. You can also freeze extra to use another time.
One thing I have learned over the years is to prepare, prepare, prepare! It is just so handy to have previously cooked items in your refrigerator or freezer. - 2 Tbsp. all-purpose flour
- 1 cup chicken broth
- 1/2 cup milk
- 3 cups chicken breast, cooked and shredded
- 6 slices bacon, cooked and diced
- 6 hamburger buns

Notes
- Ranch dressing is a great topping for the sandwiches!
- I typically use leftover chicken that has been cooked in a slow cooker. It shreds very nicely.
